Today, I’m excited to share a fun little recipe that I’ve made recently that is healthy, yummy, and versatile.  This sauce was inspired by the fresh tomato sauce from this yummy eggplant pizza recipe (which I also made and LOVED) and some left over produce in our fridge.  It’s tasty, healthy, and easy to make.

Italian seasoning makes this a little less salsa like, but I still really enjoyed it with chips for a good afternoon snack.  It’s got a small bit of a sweet taste that is just perfect.  I think this would also work really well on a larger scale in spaghetti or any pasta dish that calls for tomato based sauce.  If Hubs didn’t really dislike onions, this would be our new go-to spaghetti sauce.

Ingredients
1 large, ripe tomato
1/2 onion (or a small onion)
1 cup sliced peppers (I used fresh peppers I had frozen that were sweet-ish, not too spicy)
1 tbsp Italian seasoning
2 tbsp olive oil

Directions
Heat olive oil in medium skillet over medium heat.
While the oil is heating, dice the tomato, onion, and peppers.
Mix vegetables in skillet and top with Italian seasoning.
Stir often to make sure that veggies are mixed well.
Cook for 5-7 minutes over medium heat until veggies are tender.
Scoop into a bowl.  (This way I don’t totally drain all the olive oil out, but I don’t get all the extra either.  Feel free to drain if you’d like.)

It’s easy, healthy, yummy, and versatile – basically, perfect.
