Today, I’m sharing a healthy breakfast recipe that I’ve enjoyed making and sharing with Little in the mornings.  It’s adapted from a Pinterest recipe that I glanced at, but couldn’t find when I went back to make them.  So I winged it, but the good news is, this recipe is so simple, I was able to throw it together without looking at the screen.

They wheat free and dairy free pancakes are super easy, and tasty – but with a totally different texture than a regular pancake.  Bonus: If your bananas are really ripe and sweet, you don’t need any syrup!  They are perfect for sharing with toddlers or eating yourself.

INGREDIENTS
1 ripe banana
2 large eggs
1/8 tsp baking powder
1/4 tsp cinnamon (I just eyeball it to be honest and sprinkle as much as I want into the bowl)
1/4 tsp vanilla

DIRECTIONS
In a bowl, mash the banana until it is smooth.  Mix in eggs and other ingredients, stirring until smooth.
Use a spoon (I use a ladle) to spoon mixture onto a hot, sprayed flat pan.
Cook for about 2 1/2 minutes on each side until done.

Breakfast is such an important meal of the day and it’s always good to get off on a good, healthy start.  What are your favorite things to eat for breakfast to start your day off right?
