Spring has finally sprung over here!  Like, officially, no going back it’s springtime and my heart could not be happier.  Of course, I could do without all the pollen that blankets North Carolina this time of year.  But, man – it feels good to feel the sun on my skin once again and to be getting outside more often.

If you’ve been around here for any length of time you know that I love things that are kid-friendly and easy to prep, create, and clean-up.  Whether it be crafts or cooking, I am all about keeping it simple.  That’s why I love to make rice krispies treats for desserts around here.  Hubs likes them, Little likes them, and I like them, so it’s a win for everyone.

We made Shamrock Rice Krispies back in March and I thought it would be fun to make another batch to celebrate the arrival of Spring.  (Full disclosure – I made two batches because Little got his hands on the first before I could decorate them.  What can you do?)

Spring Rice Krispies Treats

Besides the fact that everyone in our house loves these, one of the reasons I enjoy making rice krispies treats is because it’s something that Little can easily help with.  He loves to “dump” in the marshmallows and the cereal and press them down into the pan with the spatula.  So, if you are looking for an easy, toddler-friendly cooking activity – these are perfect.

Ingredients

  • 4 Tbsp butter (1/2 stick)
  • 5 cups crispy rice cereal (Rice Krispies brand or store brand – they taste the same in the recipe to me.)
  • 1 (10 oz) bag of marshmallows
  • Candy Melts for decorating – I used green yellow, and white, but you can use any bright colors you want.
  • Flower sprinkles – or rainbow sprinkles will work, too.

Directions

  1. Melt butter over medium-low heat.
  2. Stir in marshmallows – stirring continuously until they have all melted.
  3. Mix until smooth.
  4. Add in cereal.
  5. Stir until cereal is evenly coated in marshmallows.
  6. Press into a greased 9×13 pan.
  7. In separate, small bowls, melt candy melts one color at a time.
  8. Once melted, use a spoon to drizzle each color of candy across the treats.
  9. Add sprinkles.
  10. Allow 10-15 minutes to cool before cutting

I mean, could there be a simpler treat?  And bonus – minimal crumbs.  I’m just saying.

  2. They turned out looking so pretty and I know they taste delicious! The other day someone made us rice crispy treats, but instead of butter they used coconut oil for allergies. It actually tasted really good with a coconut flavor. I was pleasantly surprised!
